Despite
the different production technologies and geographical origin, the
surface microbiota of Formaggio di Fossa, Gorgonzola and Taleggio
cheeses share common features. Common DGGE bands originated by P. celer, P. aquimaris, P. glacincolaus, S. equorum, and M. luteus
were identified.
