Using this extended dairy catalog, we \nrevealed the presence in traditional cheese of dominant microorganisms \nnot deliberately inoculated, mainly Gram-negative genera such as Pseudoalteromonas haloplanktis or Psychrobacter immobilis, that may contribute to the characteristics of cheese produced through traditional methods.\n"}
